Makes 4 Portions –
2 Eggs
1/3 Cup Rolled Oats
1 Cup Wholemeal Flour
1 Tsp Baking Powder
1 Cup Milk
1 Tbsp of Butter or Oil
Fruit and Honey to serve
Method
- In a large bowl whisk eggs until combined then add milk
- Add oats and gradually whisk in flour, mix well ensuring there are no lumps. Add a little extra milk if needed. (batter should be fairly runny)
- Place a pan on medium heat and add a little butter (or oil for dairy-free). Once melted add one ladle of pancake batter. the batter should spread out into a thin layer and bubbles should form on the surface as it cooks. After 1 minute gently slide a spatula under the pancake and flip it over to cook the other side. Repeat until all batter is used
- Serve immediately with fruit, a drizzle of honey and a scoop of fresh cream if desired
