Oat and Raisin Cookies

Makes 26 Cookies-

150g Butter
1/4 Cup Raw Sugar
1/4 Cup Honey or Mayple Syrup
1/2 Tsp Bi-Carb Soda
1 Cup Rolled Oats
1 Cup Wholemeal Self Raising Flour
1/3 Almond Meal
1/2 Cup Raisins or Sultanas
 

Method

  1. Preheat oven to 170 degrees
  2. In a saucepan melt butter, sugar and honey together on a low heat, once combined add bi-carb and stir well
  3. In a large bowl mix remaining dry ingredients together using a wooden spoon 
  4. Add the sugar and butter mixture to the dry ingredients mixing until a dough is formed
  5. Using your hands roll the dough into 26 small balls, space them out onto a greased tray
  6. Place trays in oven and bake for 12 minutes
  7. Allow cookies to cool before gently sliding them off the tray with a spatula
Note: 1/4 Cup of choc chips can be added to make these extra yummy!
